Ingredients:
- 2 cups wheat flour
- 4 medium sized boiled and mashed potatoes
- 1 tsp red chili powder
- 1 tsp garam masala powder
- 1 tsp amchur powder (dried mango powder)
- 1 tsp cumin powder
- 1 tsp salt
- 2 tbsp chopped coriander leaves
- 2 tbsp oil
- Water, as required
Instructions:
1. In a mixing bowl, add the wheat flour and salt. Mix well.
2. Add water gradually to the flour and knead it to form a smooth dough. Cover the dough with a damp cloth and keep it aside for at least 10-15 minutes.
3. Meanwhile, in another bowl, mix together the boiled and mashed potatoes, red chili powder, garam masala powder, amchur powder, cumin powder, salt, and chopped coriander leaves. Mix well and set it aside.
4. Take the dough and divide it into equal-sized balls.
5. Take one ball and roll it out to form a small circle using a rolling pin.
6. Add around 1-2 tbsp of the potato filling in the center of the rolled-out dough.
7. Bring the edges of the dough together to enclose the filling and pinch the dough to seal it properly.
8. Using a rolling pin, gently flatten the dough ball and roll it out again into a circle of about 5-6 inches.
9. Heat a tawa or griddle on medium flame.
10. Place the rolled-out paratha on the tawa or griddle and cook it for about 1-2 minutes or until small bubbles start to appear on the surface.
11. Flip the paratha and apply a little oil on the surface.
12. Cook for another 1-2 minutes or until both sides of the paratha turn golden brown.
13. Repeat the same process with the remaining dough balls and potato filling.
14. Serve the aloo parathas hot with butter, curd, and pickles.
